Un air de printemps

Lemongrass, Vanilla and Red Currant Cakes
(For 4 cakes)
You need:
1 lemongrass stick, chopped finely (I used a coffee grinder)
1/2 vanilla bean, split open and seeds scraped out
5 Tbsp butter
1/2 cup confectioner’s sugar, sifted
1/2 cup almond flour, sifted
1/4 cup white rice flour*
1/4 teaspoon baking powder
Pinch of salt
2 egg whites, lightly beaten with a fork until foamy
1/2 tablespoon poppy seeds
1/3 cup red currants
*You can substitute white rice flour with all-purpose flour
Steps:
Preheat your oven at 350 F and butter 4 muffin molds; set aside.
Melt the butter in a pot and set aside.
In a bowl, mix the flour, almond powder, confectioner’s sugar, salt and baking powder.
Add the vanilla seeds and lemongrass.
Make a hole in the middle, then add the white eggs and mix well.
Add the melted butter while continuing to mix.
Add the red currants and poppy seeds, and divide the batter between the 4 molds.
Bake for 30 min.
Remove and let cool down for a few min before unmolding on a cooling rack.

Chocolate, Olive Oil and Fleur de Sel

Chocolate, Olive Oil and Fleur de Sel Bocadillo
I stumbled upon this recipe via Canelle & Vanille and Immediately got the car keys and went to the market. I can't wait to share this with my mum and sister...this will surely become a favorite.
1 crusty baguette
2 70% cacao chocolate bars
2 tsp organic arbequina olive oil or any good quality extra virgin olive oil you like
Couple of pinches of fleur de sel
Cut the baguette in half and toast it under the broiler. Remove it from the broiler, drizzle some olive oil and place the chocolate on top of the bread. Place it back in the broiler for 5 seconds so the chocolate warms up a bit but remember that we don't want to melt the chocolate! Remove from the oven and finish it with the salt.

Sara & the Garden Swap part II

as you know I took part in nicole hill's
garden swap. I had so much
fun putting it together-truly
my swap was to sara schofield...
Can I just say how lucky it is for me that
i was given her name for the swap.
Her blog is special, when I visit it-daily...i sometimes
read it out-loud- her writing is like music......and I find myself
daydreaming and pondering.
